Anniversary Getaway (picture overload)

The hubs and I celebrated our first year anniversary this weekend! Palm Springs was our destination and what a great choice it was. Usually, I am an over planner and make sure we visit all the attractions a place can have, with only sparing time to sleep. Ok, I'm not THAT bad but, I just don't want to skip something that is awesome and later have someone tell me, "you didn't visit the 200ft waterfall made out of chocolate!?" This time my hubby made the reservations and did no research on "things to do" in Palm Springs. Let me tell you, it was the best vacation EVER. I have never come back from traveling so relaxed, it was amazing!
We stayed at the Renaissance Palm Springs and we loved it.

Dinner the first night we went to MatchBox and it was delicious!
We sat outside on the patio where we could see the strip and people passing.
I had the roast chicken on wild rice with cauliflower mash. YUM!

For our anniversary dinner we decided to dine at Spencers.
We had lobster potsickers for our appetizer, A-mazing! 
Hubby had a steak with truffle fries and I had the duck on top of potatoes. I am sure we will eat here every time we visit Palm Springs.

Aaaannd the cake. 
Being a year old cake - we were both pretty skeptical.  When you think about it, its been sitting in the back of our freezer since last year.  Yes, we wrapped it in saran wrap and tin foil about a thousand times but, a year old?! We let it defrost in the fridge for the day and honestly it was in the back of my mind, wondering what it would taste like. I was really worried we would both be sick. Our cake was marble flavor, not marbled in mold. After dinner we took a bite and it wasn't half bad. I wouldn't have eaten a whole slice to myself but, it was a fun tradition to share with the hubs.

After shopping on the strip, we stopped into Great Shakes.

 On our last day we headed on over to LuLu for breakfast and it was pretty delish.
The first two days this restaurant was packed full of people and we will have to try this place for dinner next time.
 Heading out of town we detoured to Palm Springs Aerial Tramway.
We reached an elevation of 8,516! The temperature dropped significantly at the top, almost 30 degrees cooler than the desert floor.  It was pretty cold at the top but, with a 360 view I couldn't complain.

Time to Celebrate

Today is hubby and I's 1 year anniversary! 

Our wedding was a magical day and we couldn't be more happy to have spent it with family and friends. 


I first want to say thank you to my wonderful husband who is my rock and my best friend.  He is absolutely the best thing that has ever happened to me and I can't thank him enough for making my life a fairy tale.  I have truly found my prince charming.  He can read me like a book and I really am happy that he can. He does a great job of making any situation better and has me smiling in an instant. 


 Second, I want to thank our parents for their support and guidance in our relationship and marriage.  On top of that, I am most thankful to my in-laws for raising such a strong and kind man who is positive in every way possible.  You both are fantastic people and I couldn't ask for better in-laws.

 
    
    

It has been an adventurous first year and I wouldn't change anything about it.

Pregnancy Meal Plan

My mom keeps reminding me of how she never ate anything bad during her pregnancies.  Honestly, I am pretty envious of that and I think that is a really remarkable thing to do for 9 months.  I was raised on a healthy diet and I never "craved" sweets or junk food.  I'm not saying we didn't get to have those things, they were just more of a treat on occasion and not a staple at home. One of the most memorable things growing up was having my mom give us a couple bucks to go to the neighborhood market to pick our favorite ice cream treat.  Those were great times, sitting on the porch with my mom and sister and soaking in a summer night with our ice creams.  I think she created a great way of how to keep my sister and me eating healthy without complaint.  And I am grateful.  I am nowhere near perfect when it comes to eating but, since becoming pregnant I am definitely more conscious of my meal choices.  During this pregnancy I have been eating really well but, I do have the occasional treat!  

Here is my meal plan for the past few months...

Breakfast:
Glass of Orange Juice
Bowl of Cereal (usually Special K w/ Strawberries)

Snack:
Overnight Oats with Chia seeds
 1/2 Cup Oats
1/2 Cup Yogurt (vanilla)
1/2 Cup Coco Milk
1 tbsp Chia Seeds
Mix and let it sit in the fridge overnight. Drizzle with agave or honey.

Lunch:
Sweet Potato Mix 1/2 cup sweet potatoes, 1/2 cup black beans, 1/2 cup corn
FAGE Yogurt
On occasion I do get a smoothie from Robeks during my lunch hour if I am feeling really hungry that day.  

Snack:
PBJ Sandwich
Apple

Dinner:
Varies but, is usually chicken and vegetables or with wheat pasta of some kind.

I do prep my lunches two to three days in advance except for the pbj that I make in the mornings.  I don't mind getting up early but, I am surely not going to slave over the stove at 6 in the morning.

26 Week Update

I am officially 26 weeks pregnant with 98 days to go! 

After surviving the first trimester of morning (all day) sickness and not being able to eat meat or dairy, I am now back to normal!  You can definitely tell I am pregnant now and am happy to show it off! 


Monday, I took my glucose test and from what I heard from other moms I was dreading the whole process. I honestly thought the drink was pretty delicious, considering I was starving from fasting the night before. To me it tasted like flat orange soda and it wasn't bad at all.  Not sure what the fuss was about. 


My belly button is still in for the moment and I have gained about 17lbs so far.  I am sleeping through the night except for the midnight wake-up call to waddle to the bathroom.  Ryder is moving quite a bit now and more so when I have fruit.  It feels like he is tapping from the inside. I have my husband feel my tummy when he is really active and I just love the look on his face, it's priceless. We are so excited!

It has been so hot at our house, we have been taking the boat out the last few weekends.  Pregnancy and heat is not a great combination so, a day at the bay really makes everything better.
