Chicken Curry Pizza

We are indulging a little bit tonight and I wanted to share this recipe. 

My husband and I go to a restaurant nearby and they serve a delicious pizza similar to this.  Considering it's pizza... it really can't be that healthy but, I tried in this version. 

Preheat oven to 350.
Ingredients: Pita Bread, Pesto, Spinach, Red Onion, Marinated Artichokes, Feta Cheese, Coconut Milk (1 cup), Coconut Oil, Tumeric (1 tbsp), Corriander (1 tbsp), Curry Powder (1 tbsp), Salt and Pepper.
  
Cook chicken in a pan with a little bit of Coconut Oil.
 
When fully cooked add a cup of Coconut Milk along with Curry Powder, Turmeric, Coriander, Himalayan Salt and Pepper.

Simmer until liquid is almost gone, you don't want to make the chicken dry. Set aside to cool.

 Pan fry thinly sliced red onion in coco oil and do the same with the artichokes.  You could always add bell peppers or other veggies you like to this too!

 Now, spread some pesto onto the pita bread.  Add your toppings and pop it in the oven for about 12 minutes. 
  

If your ravenous when it comes dinner time, you could be a savage (like me) and eat the entire thing. Or you could share and have a salad with it. =)

2 1/2 Month Update

Ryder is 2 1/2 months today! 
He is now recognizing faces and acknowledging you when you enter/leave a room.  Smiling is a regular thing these days and also using his voice. We are so happy with his progress!

Ryder had a doctors appointment on Friday and he is now 10lbs 3oz & 22 inches!  My sister was exactly the size he is right now when she was born.  I could not imagine having that large of a baby at birth... my mother is a strong woman.

He also had his first round of immunization and took it like a champ!

I love when he falls asleep in my arms.  He is almost sleeping through the night.  We are getting a 7 1/2 hour stretch at night, which is amazing!  I couldn't ask for an easier baby. ♥

Healthy Eats

With Mt. Whitney almost on the books, I have been trying to be a little healthier lately.  Adding a lot more greens into my meals and starting to work out more frequently is the plan.  I wouldn't call this a diet because I am in no way restricting myself from anything, just making healthier choices. ;)


Every morning I have a smoothie and always start my then with a handful of spinach and coco milk. Other ingredients depend on what I have but, usually fresh fruit and a protein powder.
Hers: Topped with bee pollen and coconut shavings. 
His: Topped with bee pollen, coconut shavings, hemp hearts and goji berries.

Hemp seeds: Contains omegas, fiber and protein! Add it to yogurt, salad or cereal.  
Power Snacks: These little bite size bars are great for a quick pick-me-up when you are in a hurry and want something healthy.
Goji Berries: Have a ton of great nutrients click here for the list!

Bee Pollen: We top our smoothies with this and it's delicious!  This helps with digestion, its an immune system booster, respiratory system, treats allergies, energy enhancer and much more.

Late night snack: Vanilla Greek yogurt with tangerines, grapes, goji berries, flax seed and bee pollen.

2 Months Postpartum

Yesterday, my husband asked me what I wanted for my birthday and I replied with "I want to hike Mt. Whitney".  Now, I have done it before but, not with my hubby.  I thought it would be a great experience for the both of us. It is a great feeling of accomplishment when you are done. The last time I hiked the mountain it took me 10.5 hours and yes I am a little competitive with myself and I would like to beat my time just by a half hour if possible.  We are going with a much larger group this time as I only had my uncle and cousin previously. Let me tell you, this isn't your local mountain kind of hike.  This bad boy is 22 miles round trip and you gain over 6,000 ft in elevation.  The trail is steep and the temperature drops the higher you go.  Its a beautiful hike and if any of you get the chance to do this, go for it!

In order to hike the mountain you have to request a date and then go into a lottery for that date. I hope we get it! 



Almost at my due date with Ryder & a few weeks before we got pregnant.

I worked pretty hard for that pre-baby body. I hope I can get back to it!

Prepping for this hike is going to be great motivation especially after having Ryder!

2 Month Update

My sweet little man is 2 months old today! Time has flown by and I am trying to soak up every minute I have with him. 

He is still wearing newborn size clothing but, boy when the belly is full he sure stretches the mid section.

The hubby and I are getting about 6 hours of uninterrupted sleep at night (9pm - 3am). Hallelujah! I never knew how much I loved sleep until now. 


Ryder is all smiles lately!  He is the happiest baby. 95% of the time he is smiling and having fun and the other 5% he is hungry or needs a diaper change. I hope he's this easy when he gets older. 


This is our Valentine's Day card we are sending out to out family! He is just too cute!

I am still in awe that he is ours to keep.  Watching him grow everyday just amazes me.
